1. Difference in shape

The difference between the two is quite obvious. Hairy yam is relatively thick, about 4-5 cm thick, and has an irregular shape, some are thin and straight, and some are curved. The iron stick yam is relatively thin, usually only 1-1.5 cm thick, and of uncertain length, with a round head and a pointed tail.

2. Differences in the epidermis

There are also obvious differences between the two in the epidermis. Hairy yam is relatively smooth, and the pores, bumps and hairs on the epidermis are very sparse and scattered. The skin of the iron stick yam has obvious pores and bumps, the hairs are densely distributed, and there are purple spots on the surface.

3. Difference in texture

Hairy yam is high in moisture and is quite juicy. The moisture can be squeezed out by hand. It is easy to break and has a relatively rough texture. The iron stick yam has a delicate texture, firmness and fine fibers. It is stronger than the former and not easy to break.

4. Difference in taste

In addition to the obvious difference in appearance, the two are also very different in taste. No matter how long hairy yam is cooked, it always tastes crispy and is often made into refreshing dishes. If you boil the iron stick yam in a pot for 10 minutes, it will become sweet and dry, and will not fall apart even after being cooked for a long time.
