If you want to eat delicious cardoons, you must first have absolute patience (because cardoons are quite difficult to handle).

First, cut off the head of the cardoon, just enough to expose the white stuff inside. Don't cut off too much. Also, cut off a piece of the cardoon's root, leaving only 1-2 cm.

Then use scissors to cut off all the leaf tips wrapped by the skin (this part can be omitted), and the hardest leaves at the bottom can be removed directly. You can apply a layer of lemon juice on the cut leaves to prevent them from changing color due to oxidation.

Boil the cardoons in water. You can add some salt to the water and let it soak for 40 minutes to 1 hour, depending on the size of your cardoons.

When cooked, cardoons will turn from green to dark green or brown and are ready to eat.

When eating, peel off the leaves of cardoon one by one, and you can choose any sauce according to your taste.

Cardoon leaves are not eaten by chewing, but by scraping out the edible inner part of the leaves with the teeth.

After eating the entire outer leaves, you can eat the most delicate and delicious part inside.

First remove the white layer inside, which can be scooped out with a spoon, and then you can eat the most delicious part of the cardoon.
