Usually the plant is most cold-resistant when it reaches a height of about 10 cm and has 4-5 true leaves. Therefore, overwintering spinach has strict requirements on the sowing time, and sowing should generally be completed in early October when the local average daily temperature drops to 17-19℃. This way, by the time the spinach stops growing in late November, the seedlings will be large enough to safely overwinter.

3. Eat spinach

This spinach safely overwinters in the soil in seed form and can be sown before the soil freezes in late November. In the spring of the second year, as the temperature rises, the seeds will germinate.
