Kelp and laver grown in the sea are cold vegetables, while vegetables grown on land, such as potatoes and ginger, are hot vegetables because they are often in the soil underground and absorb less water.

4. Season

Foods in winter and summer are cold vegetables, while foods in spring and autumn are hot vegetables. Because plants grown in winter are subject to greater cold, they are cold vegetables. Vegetables grown in summer are also cold vegetables because they receive more abundant rainfall in the summer. Vegetables that grow in the dry spring and autumn are heat-loving vegetables.
