Sunflower seeds are generally considered to be its fruit. Academically, they are called achenes, commonly known as melon seeds and sunflower seeds. However, the fruit consists of three parts: pericarp, seed coat and embryo. The seeds of sunflower specifically refer to its embryo, i.e. the kernel. The seeds can be eaten and pressed for oil. They are rich in unsaturated fatty acids, proteins, carbohydrates, and other vitamins and trace elements. They are a very popular snack and source of edible oil. Generally, edible seeds are longer, the pericarp is thicker, and the color is mostly alternating black and white stripes. Oil-producing seeds are relatively short, have thin skin, and are mainly black in color.
