2. Which one is better

1. Ordinary yam: This type is also known as vegetable yam. It is relatively coarse, has no rust-like spots on the surface, contains more water, and is very easy to break. Its skin is relatively thin and can usually be removed with a brush. It feels slippery and greasy to the touch. If you cut it with a knife, the cut surface will easily oxidize. Generally, the cooking time should not be too long, otherwise it will become too mushy.

2. Iron Stick Yam: This kind of yam is a very good variety. Compared with ordinary yams, its thickness is more uniform and its diameter is usually between 1-2 cm. It has a lot of hair, its skin is dark in color, and has dark red rust spots. It is very powdery and greasy, and the cross-section is white or yellow when cut. If you cook it normally, it won’t become soft even if you cook it for a long time.

3. Huai yam: Huai yam’s original name is Huai yam. It is a specialty of Jiaozuo City, Henan Province, my country. Since this place was called Huaiqing Prefecture in ancient times, the variety produced is called Huai yam. The local soil is mostly loam or sandy loam, with a relatively deep soil layer, rich in nutrients, and suitable sunshine and precipitation, which is very suitable for plant growth.
